In 1996, when craft beer was still a foreign term and San Diego County was home to only a handful of breweries, the Chapman brothers Ron and Rick opened a brewpub in their hometown of Coronado. Today CBC stays true to its San Diego roots, brewing abundantly hoppy West Coast-style ales, which are available today in 14 US states and 12 countries. In addition to the long-established pub in Coronado, the company opened a tasting room inside its San Diego production facility in 2013, and a tasting room and restaurant in Imperial Beach, California in 2014. Summary: Responsible for ensuring that all equipment related to the packaging process is operated in conjunction with all Coronado Brewing Company’s SOP’s. Properly assists in packaging operations by performing the following duties.
Duties and Responsibilities include the following. Other duties may be assigned.
- Packaging of product into cans, bottles or kegs following all standard operating procedures, while also being able to complete production adjustments based on the changing needs of the business.
- Operate all aspects of packaging including CIP, filler operation, quality checks, palletizing, and movement of finished materials.
- Obtaining the proper authorization to package a beer. Documentation of key quality parameters and verifying beer meets specifications.
- Maintain a clean, organized, and safe work environment following OSHA and company guidelines.
- Ability to troubleshoot packaging equipment and communicate issues to management and maintenance department, while able to perform minor preventative and appropriate maintenance on all machinery concerning quality, safety, waste monitoring, training records, and other related maintenance as necessary.
- Train new packaging employees proper machine operation and safety procedures
- Communicating with management and other packaging team members on the status of packaging.
- Organize, track, and audit inventory of finished beer, cans, labels, and all other packaging supplies.
- Tracking package quality of finished beer (dissolved oxygen, carbon dioxide, total packaged oxygen, etc.)
- Loading and unloading trucks.
- Helps out with Keg Washing by ensuring that clean keg stock is kept at designated range.
- Ensure proper packaging inventory levels are kept up with by recording and communicating current inventory in warehouse.
- Other brewery-related tasks that may require assistance.
- Performs other related duties as assigned by supervisor/manager.

Job Title: Cellar Person
Reports To: Head Brewer

Summary: This position performs daily cellar tasks while maintaining company policies and ensuring that products meet Coronado Brewing’s high-quality standards. This position will focus on performing the brewery’s cold side operations, including cleaning and sanitizing brewery tanks and equipment. It is essential for this position to communicate regularly and effectively with the Brewers and Head Brewers & to ensure all cellaring responsibilities are fulfilled safely, efficiently, effectively, and accurately.
Duties and responsibilities: (additional duties may be assigned)
1. Perform cleaning/sanitation on all fermentation vessels and BBTs
2. Monitor the quality of the product: temperature, gravity, pH, and carbonation on all fermentation vessels and BBTs. Alerts the head brewer and QA/QC manager of any issues or concerns.
3. Completes dry hopping, fruiting, and back-Sweetening on beer, seltzers, and cider.
4. Fines, Centrifuge, or racks all product and ensure it is up to CBC quality standards and ready for packaging.
5. Maintaining cleanliness of all brewery equipment, including cellar floors, drains, and tank exteriors.
6. Identifies and communicates problems with equipment, malfunctions, or breakdown in process.
7. Inform the head brewer and plant manager of any observed equipment or mechanical issues.
8. Communicates regularly, efficiently, and effectively with all supervisors and team members.
9. Completes all necessary and assigned paperwork accurately and on time.
10. Arrives to each shift on time with a positive attitude.
11. Performs other related duties as assigned.
