Position Summary:
The Production Supervisor (Brew/Cellar) is responsible for all brewhouse and cellar operations, ensuring both hot and cold-side operations are executed safely, efficiently, and to specification. This role leads brewers and cellar team personnel and ensures recipes, production plans, and all brewery operations are executed accurately.
Core Leadership Responsibilities
Brewhouse Execution
- Lead all wort production (mashing, lautering, boiling, knockout)
- Ensure recipes are followed precisely (gravities, volumes, timing)
- Own brewhouse efficiency (yield, cycle times)
- Oversee fermentation, dry hopping, crashing, and conditioning
- Manage transfers, centrifuge/filtration, and carbonation
- Ensure proper tank scheduling and utilization
- Willingness to work a variable shift dependent on operational needs of the brewery. May require night, weekend and 12 hour work days.
- Perform daily job duties including not limited to: CIP, Malt Milling, brew house operations, wort transfer, yeast pitching, cellar monitoring, filtration, general cleaning, beer quality tasting.

Team Leadership
- Reflect company core values and culture attitude
- Direct day-to-day work of brewers and cellar team
- Train team and reinforce SOP’s and safety practices
- Ensure consistent execution of all brewhouse and cellar operations
- Provide feedback to Head Brewer on performance
- Responsible for all brew/cellar team member management responsibilities including, training and development, coaching, performance appraisals and progressive discipline for the brew/cellar team.
Production Coordination
- Maintain real-time visibility of tank status
- Execute brew schedule set by Head Brewer
- Communicate tank readiness with team and managers
- Ensure smooth handoff from brewhouse → cellar
- Coordinate with Packaging Manager/Superviror/Lead on readiness
- Collaborates on inventory management efforts including raw materials, packaging and finished goods
Data & Accuracy
- Ensure all brew and cellar logs are accurate and complete
- Track efficiency metrics (extract yield, brewhouse loss)
- Maintain lot traceability
- Flag inconsistencies or errors immediately
Quality Execution
- Partner closely with QC and Head Brewer
- Ensure adherence to specs (gravity, temp, DO, carbonation)
- Protect beer quality through proper handling practices
Success Metrics
- Brewhouse efficiency (% yield)
- Brew cycle time adherence
- Accuracy of brew/cellar logs and data
- Safety performance
- Consistency of wort specs
- Tank utilization and turns
- DO pickup and quality metrics
- Loss during transfers
Requirements
- Must reside in the county of San Diego, CA
- 3-5+ years with brewing and cellar experience with strong understanding of both hot and cold processes.
- Proven success in overseeing, leading, and mentoring a production brew team .
- Proven decision making and analytical skills.
- Prior experience in a fast paced environment which is heavily integrated with other functional departments.
- Demonstrated ability to develop and implement a long-term plan while multi-tasking, prioritizing and adapting to changing situations.
- Professional and proficient verbal and written communication skills.
- Proficient with MS Office Applications and company ERP system
- Must be able to frequently lift and move up to 50 pounds, and occasionally lift up to 75–100 pounds (e.g., grain bags, full kegs) with assistance from team members or mechanical aids
