Behind every good brewery is a head brewer overseeing all aspects of the beer production process. In this week’s blog, we sat down with the guy overseeing our brewing operations at our Bay Park headquarters and production facility.
Q&A with Head Brewer Mark
How did you get your start in the beer industry?
I started by volunteering my time at Mission Brewery, working 20-30 hours for free (mopping floors, helping bottle, etc.) while working full time at another job. Back then, Mission was brewing in Chula Vista. The brewhouse was inside an industrial warehouse of a car collector. There were a bunch of cars on stilts and they would have brewing equipment and grain bags sitting on the hoods, with a brewhouse tucked in the corner. It was an interesting experience.
What’s the coolest part of your job?
I think the coolest thing is that I physically create something that gets sent out into the world and is tangible – people can enjoy it, praise it, criticize it, whatever. It’s a job where I try my best and I get real feedback. I leave my mark in my own small way.
Which beer are you most proud of? Why?
Coco Chaos. That beer was very special to me. I used coconut milk powder and it gave the beer this interesting, rich, creamy texture. I think it was a very complex beer and it had other industry people asking how I did it.
What’s your favorite Coronado beer?
Never Better. I love that hop combo and it drinks so smooth for being over 8% ABV. It got me drinking higher gravity beers again.
What are some of your hobbies outside of work?
I like to spend time with my girlfriend and dog. I also watch a lot of movies. I love 80’s movies, like Night of the Comet and Escape from New York.
